Escuela Viva delivers family-style meals to early childcare programs!  

Our mission at Escuela Viva Meal Delivery is to support busy families and educators with healthy meals designed for young children. We provide the nourishing food that every child deserves, while relieving parents and teachers from the daily challenges of meal prep.

With over 20 years of feeding children at our network of schools, we offer you the kid-friendly, vegetarian, federally-reimbursable meal service we’ve developed and love.

Dakota Rosales

Howdy y’all, I’m Dakota Russell Rosales. My family has roots in Colorado and on the Crow Creek Sioux Reservation in South Dakota, and I’m proud to be the only non-matriarch “allowed” in the kitchen during Thanksgiving. Some of my best childhood memories I carry are of watching my great-grandmother make tortillas and learning to make fry bread from my Indigenous auntie. I’ve trained in a range of settings — from a Michelin star restaurant to the kitchen of Texas A&M Corpus Christi. In my final year of culinary school, I served as president of our college hospitality club, leading student expositions and helping raise $20,000 in scholarships. Food has taught me that empathy, intention, and compassion are just as important as precise technique. I’m excited to bring my experience and passion to Escuela Viva Meal Delivery, creating nutritious, kid-approved meals that celebrate diverse food traditions while supporting children’s growth and learning. Amanda Lynch

Amanda was born and raised in the San Francisco Bay Area and attended UC Berkeley with a major in Post-Modern Literature and a minor in Race and Performance. She has worked for two decades with children of all ages in a variety of capacities, loves the work, and is very excited to be working at Escuela Viva in the Mapache class. Amanda has lived in both Guatemala and Mexico and enjoys travel above all other things (aside possibly from cheese and books) She lives in The Cully Neighborhood of Portland with her partner Kale and two small ridiculous dogs, Pickle and Olive.
